This Chicken Taco Cornbread is what we had for dinner last night (it's the first place winner recipe). It was absolutely delicious and loaded with flavor! Not to mention that it was very easy to prepare. Give it a try!

YUM! That looks so good! Did you actually use a mix for the crust?

Yes, I used a Jiffy mix because it was cheaper than the Martha White. But, I added about one tablespoon of sugar since the recipe called for a sweet cornbread mix. It was so good! The fresh cilantro made all the difference in the dressing, too. Yum.
